Chilly Day Peas + Pasta Italian Soup

hello hello! i was hungry for a late lunch today, and one of my dear friend’s mom’s posted a recipe to her pasta peas soup… they are Italian and i’ve had her cooking before, so of course i trusted the recipe ;) and wanted to make it right away. i had some other produce i needed to use up anyway, so i added my own little twist to it - and it came out SO GOOD! perfect for these cold, rainy, winter days and to fuel your body well to stay healthy or rest up. easily adaptable for vegetarian, vegan, and 30 Day approved. enjoy!

Peas & Pasta Italian Soup

Ingredients

  • 1/2 box or bag of pasta (brown rice or lentil pasta for 30 Days)

  • save 4 ladles pasta water

  • 2 small organic carrots, peeled and sliced

  • 1/2 organic onion, chopped

  • 1 tblsp minced garlic (or 3 fresh cloves, minced)

  • 1 cup veggie or chicken broth

  • 1 can of organic peas (in their water)

  • salt & pepper

  • fresh parsley, chopped

  • optional: fresh grated Parmesan

Directions

  1. Begin boiling salted water for your pasta. Wash, dry, and peel your carrots.

  2. Begin warming a medium-large sized pot over medium/medium high heat. While warming, thinly slice the carrots and chop the onion (and peel and mince garlic, if needed).

  3. Lightly oil the bottom of your pot (I used avocado oil) and add carrots, onions, and garlic. Begin cooking, stirring occasionally.

  4. As soon as water is boiling, add your pasta and cook according to directions (see photo for what I used). I cooked my brown rice pasta 2 minutes less than suggested cooking time.

  5. Once sautéed veggies are softened, add whole can of peas from the can to your pot (including the water) and add the 1 cup of broth. Sprinkle salt and fresh ground pepper over the pot, to taste. Let simmer over medium-low heat while pasta cooks.

  6. Wash and chop parsley while pasta is cooking.

  7. As soon as the pasta is done, spoon 4 ladles of pasta water into the soup pot. Drain pasta, and add cooked pasta to the soup. Right before serving, gently stir in parsley. Serve and top with Parmesan (skip this step for the 30 Days program).
