Healthy Brownies

okay, halloween is just around the corner… and while it is TOTALLY FINE to indulge time to time, I know even I (a major sweet tooth and recovering sugar addict) just don’t feel good at all when I have too many sweets or too much candy! so hopefully this gives you and your family another option to have on hand this weekend… and all year long. =)

what makes these healthy is that there is no refined sugar in them! it’s made with coconut sugar and all real-food based ingredients. this makes them better than most any dessert you can buy for your gut, your energy, your thinking, and your tummy. happy baking!

Healthy Brownies

makes: 9-12 servings
time: 5-10 mins prep / 15-20 mins baking

Ingredients

  • 3/4 cup almond flour

  • 3/4 cup coconut sugar

  • 3/4 cup cacao powder

  • 1/2 cup almond butter

  • 1/4 cup almond milk

  • 3/4 tsp baking soda

  • 1/2 tsp salt

  • 3 eggs

  • 1/2 cup vegan or dark chocolate chips

Bonus! Optional if you like frosting on your brownies:

  • chocolate protein powder

  • Greek or plain unsweet coconut milk yogurt

  • almond milk

Directions

  1. Preheat over to 350°.

  2. Grease an 8x8 or 7x9 glass pan with coconut, avocado, or olive oil OR use parchment paper.

  3. Mix all ingredients together in a medium bowl (except for the chocolate chips), stirring only until just fully combined - batter will be thick and gooey!

  4. Then gently stir in the chocolate chips.

  5. Transfer to baking dish and bake for 15-20 mins (less for more fudgey brownies, more for more cakey).

  6. While cooling, make your frosting, if you’d like! Combine above ingredients until you reach the taste and consistency you like. Start with 1/2 cup protein powder + 1/2 cup yogurt + 1-2 tbsp almond milk, combine, and adjust as needed. If you are frosting the whole pan, wait for it to cool so the “frosting” will spread.

Sooo yummy!! I shoulddd tell you to cut them into 2-3” proper sizes for serving, but honestly… I just make it my goal to make them last the whole week and usually end up just eating out of the pan… LOL!

These are a more thick and fudgey brownie so keep that in mind with your cooking time and adjust to your preference. I’m obsessed. I topped mine with my protein frosting, a few chocolate chips, and chopped up OCHO Dark Chocolate Peanut Butter bar (normally I do NOT add this last part, because it means more sugar… but they had sent me a box of chocolate, and they’re amazing, so I wanted to make it a treat and to look pretty for you guys).
