Air Fryer Protein Cookie

Ingredients

  • 1/2 cup oats (I use Bob’s Red Mill)

  • 1/2 super ripe organic banana, mashed

  • 1 tsp baking powder

  • 1 scoop Arbonne vanilla protein

  • 1 tbsp melted coconut oil or runny nut butter

  • 1 tbsp almond milk (or any kind of nut milk)

  • sprinkle of cinnamon

  • small handful chocolate chips (dark chocolate, Lily’s, Let’s Bake Believe, or EnjoyLife)

Directions

  1. Mix all ingredients together except for chocolate chips. If it’s too dry or not holding together, add a small extra splash of almond milk.

  2. On parchment paper, form batter into a ball and press into a cookie shape, about 1/2 inch thick.

  3. Press chocolate chips onto top.

  4. Place cookie on parchment paper in air fryer.

  5. Air fry at 360° for about 10 mins (add another 1-2 mins after checking, if needed).

You could easily swap protein powder flavor and change up the toppings to thinly sliced fruit. So yum, enjoy!!!
