Harvest Tuna Salad
this one’s for you… don’t forget to take care of yourself this Thanksgiving week! while you’re busy - working, cleaning, prepping, phone calling, kid entertaining, family moderating, etc - remember that it doesn’t take much or take long to fuel yourself well. throw together this quick tuna salad (with lots of modifications available) for a healthy, satisfying, savory lunch, dinner, or shared snack.
Harvest Tuna Salad
makes: 1-2 servings
time: 10-15 mins
Ingredients
1 can wild caught tuna, drained
1.5 tablespoons mayonnaise
1/2 teaspoon dijon mustard
1 tablespoon chopped, flat-leaf parsley (or green onion/chives, arugula, or cilantro, or 1/4 tsp dried oregano)
1-2 tsp dried tarragon (or basil, or dill, or oregano)
1/4 apple, finely diced (unpeeled)
2 tbsp (1/8 cup) chopped pecans
1-2 tsp apple cider vinegar
Pinch salt
Pinch black pepper
drizzle of honey
Directions
Combine all ingredients together in a large bow and stir until completely combined.
Optional - chill for 5-10 mins.
Serve with Ezekiel bread, Mary’s Gone Crackers, or ribs of Romaine lettuce…. or just grab a fork!
