Buffalo Cauliflower

Buffalo Cauliflower

Ingredients

BUFFALO CAULIFLOWER

  • 1 head organic cauliflower

  • 3/4 cup water

  • 1/2 cup nut milk

  • 1 cup flour (or sub rice flour for 30 Day approved)

  • 2 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp cumin

  • 1/4 tsp salt

  • 1/4 tsp fresh ground pepper

  • 4-6 oz hot sauce (Siete brand for 30 day approved)

  • 1/2 cup butter (or vegan butter)

HOMEMADE RANCH

  • 1/2 cup vegan mayo (I use Primal Kitchen)

  • 1/8 cup nut milk

  • 1/2 tsp apple cider vinegar

  • 1 tsp crushed/minced garlic

  • 1.5 tsp dried parsley

  • 1/4 tsp dried dill

  • 1/4 tsp dried onion powder

  • 1/4 tsp crushed pepper

  • 1/8 tsp salt

Directions

  1. Preheat oven to 400-425° (depending on your oven and how crispy you like your cauliflower). Line a large baking sheet with parchment paper (or grease thoroughly with olive or avocado oil).

  2. Wash and dry cauliflower and cut/break into large bite-size chunks.

  3. In a medium mixing bowl, combine together water, flour, and spices. Mix until batter is thick enough to coat cauliflower without dripping.

  4. Dip cauliflower in batter, gently tap of excess batter, and line in a single layer on baking sheet. (Discard any leftover batter but no need to wash yet).

  5. Bake for 20 minutes until golden brown, flipping halfway through (this is round 1 of baking).

  6. In the meantime, make your hot sauce. Melt butter in small pot on stove over med-low heat, and add hot sauce as soon as the butter begins melting. Remove from heat and stir together until combined.

  7. Remove cauliflower from oven and return to batter bowl. Coat with hot sauce, and return cauliflower to baking sheet.

  8. Bake for 10-15 minutes more, until crispy to your liking.

  9. While baking, make your ranch. Combine all ingredients together in a small bowl. (Best flavor will come after a few hours, if you want to make ahead. But it’s still great right away, too! Store for 1 week in the fridge).

  10. Remove cauliflower from the oven, let sit a minute, and serve warm with your fresh ranch. Enjoy!!
